Easy Recipes
Try these easy recipe ideas to increase your vegetable intake using Wattie's Super Mix and Rainbow Mix
Vegetable dip or spread
Place 3 cups cooked frozen vegetables, ½ cup lite sour cream or cream cheese and ½ cup Heinz Seriously Good Lite Mayonnaise, 1 tsp crushed garlic and 1 chopped spring onion into a food processor and process until desired consistency.
Rice Cooker Risotto
If you have a rice cooker make a quick risotto:
Turn on to cook mode, add 2 tbs olive oil, 2 ½ cups arborio rice and 3 cups chicken stock and 2 cups frozen vege. (add more veg depending on remaining space in cooker)
Replace lid and cook until switches to warm mode
Gently fold through ¼ cup parmesan and parsley
Replace lid, stand for 10 mins on warm mode
Stove top Risotto
Add 1-2 cups of frozen vegetable and stir through your risotto 5 -10 minutes before the end of cooking.
Wraps and Pita Pockets
Add cooked cooled vegetables when making wraps and pita pockets for lunch, especially when salad ingredients are very expensive/out of season.
Potato Salad
Cook and cool and add to potato salad before adding the dressing.
Savoury muffins
Lightly cook ½ to 1 cup of Frozen Rainbow Mix vegetables and add to your favourite savoury muffin recipe.

Quiche & Frittatas
Add cooked or frozen vegetables to quiche or frittatas.

Fried rice
Heat leftover cooked rice in oil and stir through frozen vegetables, soy sauce and crushed garlic for a quick fried rice.
Pies
Add cooked or frozen vegetables when making chicken, mince or fish pies. Then top with pastry.
Vegetable Bake
Make a thick white sauce and add cooked and drained vegetables pour into an oven-proof dish and sprinkle with breadcrumbs and grated cheese and bake until hot and golden.
Curry
Add when cooking Thai or Indian curries to ensure you have enough vegetables in your meal.
Mince meals
Brown mince and add your favourite Just Add mince mix and stir through Frozen vegetables 5- 10 minutes before serving.
Pasta
Stir cooked frozen vegetables through warm pasta before just before serving with your favourite pasta sauce.
Vegetable Rice
Cook 1 clove finely sliced garlic, 1 tsp finely sliced ginger in a dash of oil and add frozen Super mix and stir-fry until just cooked. Then stir through hot cooked rice and serve immediately.
